Gluten free orange cake!



Yesterday I made this YUMMY gluten free orange cake! It is really good!
Here is the recipe!
CAKE11/2  cups of gluten free all purpose flour blend (rice flour, sorghum flour, tapioca flour, cornstarch, almond or coconut flour)
1/2 cup cup sugar
1 teaspoon baking soda
1 teaspoon xanthan gum
1/4 teaspoon salt
grated peel of 1 orange
2/3 cup orange juice
5 tablespoons vegetable oil
(The cake was a little dry so I put in one egg and a quarter cup of soy milk, It was not so dry after that)1. Preheat oven to 350oF. Spray 8-inch square or 9-inch round cake pan with nonstick cooking spray.
2.Combine flour blend, sugar, baking soda, xanthun gum, salt, and orange peal in medium bowl. Combine orange juice and oil in small bowl or measuring cup. Add wet ingredients to flour mixture and stir until smooth. Pour into prepared pan.
3.Bake 30 minutes or until toothpick inserted into center come out clean. Meanwhile, prepare frosting. Cool cake 5 minutes in pan on wire rack; remove from pan and cool completely.Frost and decorate!

ORANGE NO-BUTTER BUTTER CREAM FROSTING1/2 cup (1 stick) dairy free margarine (not spread) (I used 1 stick of butter instead!)
2 teaspoons grated orange peal
2 tablespoons orange juice
1 teaspoon vanilla
4 cups powdered sugar
4 to 6 tablespoons soy creamer
1. Beat margarine with electric mixer speed until light and fluffy. Add orange peel, orange juice, and vanilla.
2.Gradually beat in powdered sugar; beat in soy creamer by tablespoonfuls until spreadable.

And you are done!
